Tam cheese and a side of decadent beef tallow fries. Farmers Market. This Saturday market offers a well-curated selection of local farms and artisanal producers. Marin's County Line Harvest Farm is a chef favorite and purveyor to many of San Francisco's top restaurants (Coi, Delfina, Tartine) who feature the farms' organic greens (chicories, lettuces, mustard), edible flowers, herbs and root vegetables on their menus. Local artisan producers include CC Made caramels and sweet popcorn confections from nearby San Anselmo, gluten-free Flowercraft Bakery (also based in San Anselmo) and the cult favorite Blue Chair Fruit jams and marmalades from across the water in Oakland. Rustic Bakery. This producer's handmade crackers were first discovered years ago by food lovers at Cowgirl Creamery's early venture, Tomales Bay Foods. Since then, founder and head baker Carol LeValley has grown her company into a respected producer of specialty cookies and nutty, cheesy crackers sold nationally. Rustic's third bakery and cafe features organic breads and pastries, like the best-selling almond croissant, kouign amann, cinnamon puff, Meyer lemon croissant and berry scone, as well as polenta sourdough and honey whole-wheat breads to take away. Lunch offerings include Asian chicken salad, a rustic club sandwich and the banh mi–inspired Saigon sandwich. The full line of Rustic Bakery products is available, including sel gris flatbread, cacao nib cookies and savory cheese coins. 5566 Gravenstein Hwy. Shed debuted in Sonoma County's Healdsburg in the spring as a market, cafe and event space curated with an art director's eye and a sense of place. Locals and visitors gather to eat, drink and shop for cooking and picnic provisions made on-site or sourced locally, as well as beautifully crafted tools for the kitchen, garden and farm. The intriguing Fermented Bar (reps say it's the first of its kind) offers a rotating selection of kombucha and natural sodas on tap, as well as shrub, kefir, yogurt seltzer, hard cider, honey mead, beer and wine. Best sellers are the fruit shrubs offered daily (strawberry, peach, pear, blackberry), which are made in-house from local fruits and vinegars, and a naturally fermented lemon verbena soda. In addition to the house-made foods is a wide selection of local artisanal products: breads from Nathan Yanko, Kozlick's mustards, Deergnaw olive oil, Dandelion chocolates, Merchants & Millers vinegars, Hey Boo coconut jam and pastas from Baia and Community Grains. 707.431.7433 healdsburgshed.com 122 ❘ SPECIALTY FOOD MAGAZINE specialtyfood.com Laiko Bahrs is a culinary consultant and co-owner of Epicuring, an online calendar of food experiences and events in California.
