T he good news is that jams, including conserves and jellies, realized 10.3 percent sales growth between 2011 and 2013, according to the recently published "State of the Specialty Food Industry 2014" report, produced by the Specialty Food Association and Mintel. However, with unit sales remaining flat over that same time period, and some retailers reporting sales stagnation, all signs indicate that creativity and quality will drive future growth. New ingredients, unique flavor combinations, and an artisanal approach are propelling creativity and interest in this mature category, but some classics still reign supreme.
