Jaskiewicz says its high ceilings, polished con- crete, and blackened-steel storefronts were chosen as a way of honoring Washington Market, the largest market in North America from the 1800s to almost 1960. It stretched about a dozen blocks around Washington, Fulton, and Vesey Streets in lower Manhattan with hundreds of independent vendors who sold fruits, vegetables, specialty foods, wild game, and livestock. The signage and art displayed in Gotham West Market capture the spirit of Hell's Kitchen and a fun 1970s vibe, a con- scious approach the developers have taken, Jaskiewicz explains. "We try to blend into the areas where we build." Though some vendors have their own seating—ranging from bar seats to high tables and booths—common areas with picnic-style tables offer a communal setting where guests and large groups can interact and share the market's various cuisines in a food court setting. Jaskiewicz doesn't see Gotham West Market competing with any other food halls or markets in the city. Its caliber of chefs, proximity to popular local attrac- tions, and bike shop add up to an immersive and diverse experience that makes it unique. "When people come to our market they can learn a new way to eat at Ivan Ramen Slurp Shop, they can take cooking classes at Brooklyn Kitchen, watch and ask questions of each chef or sous chef—rang- ing from tapas preparation to the 200 types of beer we have at The Cannibal—and get bicycle advice at NYC Velo bike shop," he says. "I know no other place that can do that—that is our big difference."
