Here are the vendors who all agree that Gotham Market's communal vibe only adds to its character. Blue Bottle Coffee. This is the San Francisco coffee darling's 12th cafe in the country. It offers freshly roasted drip coffees brewed individually, along with specialty coffees like espresso and cappuccino and a small selection of baked goods such as double chocolate chip cookies made with Brooklyn chocolatier Mast Brothers' Madagascar chocolate. While most New Yorkers take their coffee to go, Derek B. Lingle, manager of Blue Bottle's Gotham West shop, says he likes see- ing patrons sit and enjoy their beverage from a mug. "A lot more people are getting drinks to stay," says Lingle. "We encourage patrons to sit and enjoy their coffee—the market, with its seating, is conducive to that." The company's version of Italian soda is the Cascara Fizz, a caffeinated concentrate made from the dried berries of the coffee plant mixed with seltzer water, lemon, and raw cane sugar.
