Gourmet takeout was a new concept poised to be one
of the specialty food industry's fastest-growing segments
when NASFT Showcase (the predecessor to Specialty Food
Magazine) published survey results on consumers' buying
habits in October 1985. Prerequisites to purchasing 30 years
ago hold true today: quality ingredients, convenient solutions,
skilled preparation, and appetizing appearance. Interest was
high among consumers ages 18 to 54 but most prevalent with
young, affluent shoppers who fit the "yuppie" stereotype of the
day. Health concerns and menu choice were top roadblocks to
purchasing.
