A few years ago, the team decided to "play with sea salt in our butter," says creamery co-founder Allison Hooper, and the result—Mini Sea Salt Crystal Cultured Butter—was an instant hit. "The butter brings a creamy mouthfeel, and then the crunch of salt hits you like little fireworks," Hooper says. "It's almost magical!" Inspired by the lessons learned working on a dairy farm in Brittany, France, Hooper believes in churning butter in small batches, European-style, for a more complex and farm-fresh taste. The secret to the Atlantic sea salt maintaining its crunch throughout the entire process is the higher butterfat content in this butter (86 percent) compared with most commercial butters (80 to 82 percent). The crunch of fleur de sel paired with high-quality Vermont cream from the local St. Albans Cooperative is a match made in heaven. This cultured butter is the answer to the foodservice industry's request for a high-end butter for tables and catering operations. The 1-ounce portion is perfect on buffets, restaurant tables, room-service trays, grab-and-go displays, and in bakeries and sandwich shops.
