"Our goats are going to be really excited about this," he said of the gold statuette. "The find all shiny objects irresistible." The charm hasn't worn off. Since the win, Farrell estimates Big Picture Farm, Townshend, Vt., has gained a dozen accounts—not to mention a slew of positive press. Trained cheesemakers, Farrell and co-owner Louisa Conrad have worked with creameries Blue Ledge Farm and Peaked Mountain Farm to make award-winning cheeses. With many friends already making great farmstead cheeses, the husband-and-wife team "wanted to contribute something new to the dairy aisle," Farrell writes. "So we started experimenting with caramel." The farm's goats graze freely on wildflowers and foliage, legumes and berries, to produce fresh, raw, creamy milk that lends itself to these exquisite confections. "Caramel, in particular, benefits from high-quality milk; the flavor is a direct result of browning milk fats," Farrell explains. "Our goat's milk, because of its expansive flavor profile," he continues, "produces a smooth, chewy-but-not-sticky, grass-musky-sweet and round and genuinely delicious caramel." Treated more like family than employees, the goats get their due credit. "They're good goats," Farrell says. "We love them enormously." Suggested retail price: $10.99/3.2 ounces.
