FOOD TRENDS Drinking Raw Tea Sweet Pies, Step Aside T S PHOTO: CHILE PIES howing up on restaurant menus, at farmers markets and in dedicated retail shops, savory pies are a hot trend. "We have noticed a switch from sweet to savory," says Wesley Monahan, culinary director at Chile Pies Sweet & Savory in San Francisco, which opened in 2011. "People see sweet pie as a treat but a savory pie as a meal that can be enjoyed daily." Currently, Chile Pies offers savory galettes, hand pies and signature potpies. With varieties sold full-size, by the slice or in individual tarts (and also available for shipping), this category is seeing its own flavor trends. "Right now people are loving green—greens and grains, greens and beans. Put either of those combos in a buttery crust and you have a sure winner," Monahan says. Potpies are the top sellers, though: "Our green chile chicken with fresh veggies is our best seller by far." Other hot savory-pie shops include Boston's Petsi Pies, which offers a spinach ricotta pie with pine nuts and a bacon, leek and Gruyere pie; Chicago's Hoosier Momma Pie Co., with its pork apple sage pie; and another San Francisco spot, Peasant Pies, which serves garbanzo bean curry and Moroccan lentil pies—both vegan. he raw movement has illuminated to consumers the health benefits of eating foods in their unaltered state.
