Les Moulins Mahjoub Whole Wheat Couscous exemplifies the team's efforts to focus on family-run companies committed to traditional production methods that reflect a passion and respect for the land and their craft. Located in the agriculturally rich and fertile district of Teboura, in Tunisia, Les Moulins Mahjoub produces its couscous by mixing semolina flour with olive oil, water and salt on mesh screens, letting the small grains fall through, then adding flour and rolling again until a consistent-size grain is formed. Next, the grains are coated with olive oil and salt, and dried in the sun, resulting in a rich toasty flavor when cooked. "From each and every step that goes into the 12 days it takes to make their couscous by hand, to the precise hand-labeling of every jar, every product made by Les Moulin Mahjoub is a labor of love," Davenport says. Drizzle it with extra-virgin olive oil, toss with grilled vegetables and you will taste, says Davenport, "a slice of [North African] Berber history, and a slice of Southern Mediterranean land and sun."
